I’ve done a fair amount of work with regards to photographing Dysphagia dishes over the years with Premier Foods, the NACC and Oak House Kitchen. Dysphagia is the medical term for the symptom of difficulty in swallowing, and with new industry and healthcare standards documenting the different levels of difficulty that people have with the condition, the food has to be texture modified to various degrees.

All the chefs that I have worked with have gone to great lengths to ensure that a texture modified diet doesn’t have to appear unappetizing. I overheard a phrase at a recent media launch for Dysphagia guidelines that I feel really applies to the presentation of texture modified dishes.. ”dignity in dinning”
